Carnitas style turkey sliders
Okay, I said Thanksgiving was my favorite holiday— but I didn’t tell you why! It’s not the event, well, I do like hanging with my roommates and being thankful and whatever BUT I friggin’ love the shit out of leftover hacks. Sometimes I catch myself making way.too.much. of anything just so I can fiddle around with it the next day when it’s cold or in another physical state altogether.
Anyway! Carnitas style turkey. Pick apart that turkey and get all the meat off the bones. Good? Find the sizable chunks and squish their edges to fray them a bit. Fire up a deep fryer (or in my case, Dylan’s used oil from latkes) and fry the shit out of them. I mean, crispy. You want crispy fronds. Drain on a paper towel or parchment.
Take your tiny baby biscuits and toast them lightly. Split them and spread cranberry sauce on one half and dip the other half in piping hot gravy. Pile on as much turkey that will fit without it falling over and add some parsley leaves before you squish it together. YEAH!
